Mee Siam- recipe from Kak Muna Fp, thanks....
Fried Beehun with Spicy Gravy


1 packet beehoon, soaked in water until soft

To be processed:
20 dried chillies, soaked in hot water ( I substituted with 3 tbsp sambal oelek)
10 shallots
1 tbsp shrimp paste (belacan)
4 candlenuts (optional)

100 ml coconut milk
400 g prawns
1 bunch chinese chives
400 g bean sprouts
1/2 cup water
light soy sauce
salt and sugar, to taste

Heat oil in a wok and fry processed ingredients until fragrant.
Put aside 1/3 of the fried paste.

Add coconut milk to the remaining paste in the wok.
Add prawns, water and season well with light soy sauce, salt and sugar.

Add beehoon and chives. Stir well.
Lastly, add in bean sprouts and remove from heat.









Spicy Gravy

4 tbsp preserved soy beans (tau choo)
2 large onions, thinly sliced
Tamarind juice
2 cups water
salt and sugar
1/4 cup roasted peanut (coarsely pounded)

Heat oil and fry preserved soy until fragrant

Add in the 1/3 of the fried processed ingredients.

Stir in sliced onions and tamarind juice and water. Season with salt and sugar.
Be careful with the amount of salt you add in, as the preserved soya bean may have a lot of salt added to it.
Let it simmer for about 2 minutes, then add in the pounded peanuts.


To serve, top the fried beehoon with the spicy gravy and garnish with hard-boiled eggs, cucumber, and lime.
