CHEESE AND ONION BUNS - recipe copied from Mamafami's fp

BUN
Source : Jun

184g bread flour
46g cake flour
3g instant dried yis
12g sugar
4g salt
23g honey
18g egg yolk (1 egg yolk)
35g butter (I used margarine)
138ml fresh milk ~ lukewarm


TOPPING

Margarine
Bombay Onion ~ diced
Spring onions ~ chopped
Mozarella cheese ~ to sprinkle

1. Cream the margarine.
2. Add onion and spring onion. Mix well.

Method :

1. Place flour, instant yeast, sugar, salt honey and egg yolk in a mixing bowl.
2. Turn on the mixer and pour the lukewarm milk a bit at a time till just incorporate.
3. Add in the butter and continue kneading.
4. Pour more milk if necessary and continue kneading till a soft and smooth dough is formed.
5. Make the dough into a round ball and place it in a bowl sprinkled with a bit of flour. Wrap the bowl with a clean plastic bag and let the dough prove till double the size.
6. Punch down the dough and divide into a 50g balls each. Arrange on the baking tray. Make a slit on top using a sharp knife. Wrap the tray with plastic bag and let the dough rise again.
7. Put the topping and sprinkle with mozarella cheese.
8. Bake in a preheated oven till golden brown. I used the small oven, so I set the temperature at 175 C for 25 minutes on middle rack.

Kaedah penyediaan :

campur aje sume2 and uli lembut. rehatkan 1 jam. tumbuk2 untuk kuarkan angin, and rehat lagi 30min. bahagi kepada beberape bahagian kecil, rehat 15min. bentukkan n letak filling (jun letak kaya aje) n rehat lagi 45min. bakar selama 10min pada 210'c.

Nota :

1. Mama hanya gunakan tepung gandum sahaja.
2. Kaedah penyediaan mama agak berbeza dengan cara Jun. Mama menggunakan cara yang selalu mama buat, bila menguli roti. Sila rujuk gambarajah kat Mamafami fp

TOPPING

Majerin
Bawang benggala ~ dipotong dadu
Daun bawang ~ dihiris
Keju mozarella ~ untuk ditabur.

Kaedah penyediaan :

1. Pukul majerin hingga lembut.
2. Masukkan bawang dan daun bawang. Gaul rata.

IKAN SALMON MASAK 3 RASA
SUMBER: KAK LIZA FP


Bahan:

1 ekor ikan bawal atau siakap [bersihkan dan kelar kedua belah badan]- kita gantikan dgn isi ikan salmon yg dipotong memanjang)dan tambah lada sulah
Tepung jagung [untuk salut ikan]
1 labu bawang besar ] mayang
2 ulas bawang putih ]
1 s/b halia
Minyak untuk goring ikan

Bahan Sos:

½ cawan sos tomato
3 s/b sos cili
3 s/b sos tiram
3 s/b air
1 s/k gula

Bahan Hiasan:

1 pokok daun bawang [potong 3 – 4 cm]
2 biji cili merah ] - utk cili-cili tu kena gantikan dgn cili benggala merah,hijau & kuning
2 biji cili hijau ] mayang
2 biji buah tomato [belah 4]

Cara:

1. Sapukan tepung jagung disekeliling ikan. - kita gaulkan isi ikan dgn tepung jagung,lada sulah dan garam.
2. Gorengkan ikan dalam minyak yg banyak sehingga masak dan kuning keeemasan. Angkat dan letakkan dalam pingan hidangan.
3. Keluarkan minyak dan tinggalkan 2 s/b minyak untuk tumis bahan sos sehingga wangi.
4. Kacau rata sehingga mendidih. Masukkan bahan hiasan dan tutup api.
5. Curahkan kuah sos ke atas ikan didalam pinggan hidangan.

HOT SWEET SOUR FISH

Ingredients:

1 bawal or siakap fish [clean and make slanting slashes on both sides]
Some wheat starch for dusting
1 onion ]
2 garlic ] sliced thinly
1 tbsp ginger ]
enough cooking oil to fry

Sauce (combine):
1/2 cup tomato sauce
3 tbsp chilli sauce
3 tbsp oyster sauce
3 tbsp water
1 tsp sugar

Garnishing:
1 stalk spring onion [ cut into 3cm-4cm lengths]
2 red chilli ]
2green chilli ] sliced thinly
2 tomato [divided 4]

Method:

1. Dredge fish in the wheat flour.
2. Deep fry in hot oil until crispy and golden brown. Put on a serving platter.
3. Take out the oil n leave 2 tbsp oil and fry onion and ginger in heated oil until fragrant. 4. Stir in sauce ingredients and mix well. Bring to a boil. Add in the garnish and off the fire.
5. Pour sauce over fish before serving.

AYAM PENYET - resipi dari Mat Gebu


Bahan-Bahannya :

6 kepingan peha ayam
2 camca besar minyak
3 helai daun salam (bay leaf)
2 camca besar pati santan
1 camca besar ketumbar biji, disangai hingga wangi*
1/2 camca teh, jintan manis, disangai hingga wangi*
2 batang serai, dihiris halus*
1 camca teh gula*
1 camca teh garam*
120 g hirisan lengkuas* - mula2 suspen jugak tp mmg pakai byk lengkuas
1 biji cili merah*
2 cm kunyit hidup*
4 keping hirisan halia*
3 ulas bawang putih*
3 biji buah keras*(*dikisar halus)

Cara membuatnya :

1. Ayam dibuang kulit, perap dengan jus lemon dan sedikit garam selama 10 minit, cuci dan toskan. Kemudian cucuk ayam tadi dengan garfu. Ketepikan.
2. Masukkan ayam tadi dalam bekas plastik (tupperware), tuang bahan2 kisar dan masukkan santan. Gaul rata dan lumur pada semua bahagian ayam tadi. Perap 30 minit hingga 1 jam. (mat perap 1 malam)...
3. Panaskan kuali, masukkan minyak masak dan masukkan ayam bersama bay leaf. Kecilkan api dan kecutkan ayam selamat 10 minit sehingga sedikit kering. Kemudian panggang dalam ketuhar pada suhu 200C hingga masak (kurang lebih 45 minit hingga 1 jam). Bergantung pada oven masing2.

Ingredients:

6 large chicken legs, deboned
2 stalks lemon grass, crushed
2 bay leaves (daun salam)
1 tbsp coriander seeds (ketumbar)
1/2 tsp ground cumin (jintan manis)
2 tbsp thick coconut milk
1 tsp sugar
1 tsp salt
2 tbsp cooking oil

Ingredients to grind:

120g lengkuas, peeled and sliced
1 red chilli, seeded
2 cm knob tumeric
4 slices ginger
3 cloves garlic
3 candlenuts (bush keras)

Method:

1. Fry coriander seeds over slow fire till fragrant then grind coarsely.
2. Wash chicken and drain well. Prick chicken all over with a fork.
3. In a mixing bowl, combine ground spices with ground cumin, coriander, salt, sugar, coconut milk and crushed serai. Add chicken and mix thoroughly. Leave to marinade for 30 minutes.
4. Grease base of cooking pot with some cooking oil. Arrange chicken in pot, add crushed bay leaves. Cover pot and cook over moderate heat for 8 minutes. Turn chicken over, cover pot and continue to simmer for another 10 minutes or until almost dry. Remove chicken and drain off excess liquid.
5. Grill or roast chicken on high heat, 250 deg C until golden brown on both sides.











ROTI KENTANG- resipi nie dari Mat Gebu jugak tp roti kentang kita kurenggggg......kita tersilap bahagian membuat custard tu, terlalu pekat...Lain kali boleh buat lagi....Belajar dr kesilapan....

Bahan Doh :

135 ml air sejuk dari peti ais
3/4 camca teh garam
1/2 biji telur (kurang lebih 30g)
60 g ubi kentang yg telah dilecek
300 g tepung roti
3/4 camca besar susu tepung
50 g gula halus
2 camca teh yis
1/2 camca teh bread improver (tak de dalam resipi asal)

Bahan Kastard:

3/4 cawan susu segar
2 camca besar tepung kastard
2 camca besar gula halus
1 camca teh mentega
1/2 camca teh esen vanilla

Cara membuatnya :

1. UNTUK DOH Satukan semua bahan2 doh, uli hingga lembut dan kenyal. Bulat2kan dan alih ke dalam bekas, tutup dengan plastic cling dan biar naik selama 45 minit. KAEDAH LAIN Masukkan semua bahan mengikut urutan ke dalam breadmaker dan pilih setting for dough dan tekan. Biar sampai siap.
2. Keluarkan doh uli 15 minit. Bagi doh kepada 12 bahagian yang sama besar (kurang lebih 50 g sebiji), atau mengikut saiz yang diinginkan. Bulat2kan menjadi bebola dan susun dalam loyang yang telah digris dengan mentega (mat guna muffin cup bersaiz 5 inci) dan biar 40 minit hingga naik.
3. CREAM CUSTARD Satukan susu, gula dan tepung kastard. Kacau dengan wisk hingga semua sebati. Masak atas api perlahan sambil terus mengacau hingga pekat. Angkat dari api, masukkan mentega dan esen vanilla. Gaul rata dan biarkan suam sedikit.
4. UNTUK ROTI KENTANG Isikan cream custard dalam beg plastik yg baru dan bersih. Gunting sedikit bucunya dan picit cream custard atas roti mengikut kreativiti masing2. Buat hingga habis dan bakar dalam oven pada suhu 175C selama 20 minit. Keluarkan roti dan sapu dengan mentega semasa roti masih panas, sejukkan sebelum dihidang...

As I grew, Mother gave up her spare time to fish in a river near our house; she hoped that from the fish she caught, she could give me a little bit more nutritious food for my growth. Once she had caught just two fish, she would make fish soup. While I was eating the soup, mother would sit beside me and eat what was still left on the bone of the fish I had eaten; My heart was touched when I saw it. Once I gave the other fish to her but she immediately refused it and said, 'Eat this fish, son! I don't really like fish.'
This was Mother's Second Lie.

Then, in order to fund my education, Mother went to a Match Factory to bring home some used matchboxes which she filled with fresh matchsticks. This helped her get some money to cover our needs. One wintry night I awoke to find Mother filling the matchboxes by candlelight. So I said, 'Mother, go to sleep; it's late: you can continue working tomorrow morning.' Mother smiled and said 'Go to sleep, son! I'm not tired.'
This was Mother's Third Lie

When I had to sit for my Final Examination, Mother accompanied me. After dawn, Mother waited for me for hours in the heat of the sun. When the bell rang, I ran to meet her. Mother embraced me and poured me a glass of tea that she had prepared in a thermos. The tea was not as strong as my Mother's love, Seeing Mother covered with perspiration; I at once gave her my glass and asked her to drink too. Mother said 'Drink, son! I'm not thirsty!4;
This was Mother's Fourth Lie.

After Father's death, Mother had to play the role of a single parent. She held on to her former job; she had to fund our needs alone. Our family's life was more complicated. We suffered from starvation. Seeing our family's condition worsening, my kind Uncle who lived near my house came to help us solve our problems big and small. Our other neighbors saw that we were poverty stricken so they often advised my mother to marry again. But Mother refused to remarry saying 'I don't need love.'
This was Mother's Fifth Lie.

After I had finished my studies and gotten a job, it was time for my old Mother to retire but she carried on going to the market every morning just to sell a few vegetables. I kept sending her money but she was steadfast and even sent the money back to me. She said, 'I have enough money.'
That was Mother's Sixth Lie.

I continued my part-time studies for my Master's Degree. Funded by the American Corporation for which I worked, I succeeded in my studies With a big jump in my salary, I decided to bring Mother to enjoy life in America but Mother didn't want to bother her son; she said to me 'I'm not used to high living.'
That was Mother's Seventh Lie
In her dotage, Mother was attacked by cancer and had to be hospitalized. Now living far across the ocean, I went home to visit Mother who was bedridden after an operation. Mother tried to smile but I was heartbroken because she was so thin and feeble but Mother said, 'Don't cry, son! I'm not in pain.'
That was Mother's Eighth Lie.

Telling me this, her eighth lie, she died.
YES, MOTHER WAS AN ANGEL!

M - O - T - H - E - R

'M' is for the Million things she gave me,
'O' means Only that she's growing old,
'T' is for the Tears she shed to save me,
'H' is for her Heart of gold,
'E' is for her Eyes with love-light shining in them,
'R' means Right,

And right she'll always be, Put them all together, they spell 'MOTHER' a word that means the world to me. For those of you who are lucky to be still blessed with your Mom's presence on Earth, this story is beautiful. For those who aren't so blessed, this is even more beautiful.
