KEK MENTEGA PANDAN KELAPA

Last week ada kawan order Kuih Lapis dan Kuih Serimuka dr kita dan bila dia hantar loyang balik , kita bersama-sama buat Kek Mentega Pandan Kelapa. Kali nie kita cuba resipi yg Maklang bagi hari tu.

Kepada kawan yg order kuih tu , ( u know who u are) terima kasih krn percaya dgn saya dan harap kuih-kuih tu sedappp.....












KEK MENTEGA PANDAN KELAPA

Bahan-bahan :
270 gm mentega
230 gm gula kastor
5 biji telur B
60 ml santan segar @kotak
1 sudu besar pes pandan
240 gm tepung kek@ tepung gandum
30 gm kelapa kering
1/2 sudu teh serbuk penaik

Bahagian atas (topping):
40 gm mentega
35 gm gula aising
55 gm kelapa kering

Cara Membuatnya :

1. Putar mentega dan gula hingga gebu dan putih selama 10 minit.
2. Masukkan telur sebiji demi sebiji sambil dipukul hingga sebati.
3. Masukkan santan dan pes pandan sedikit-sedikit hingga sebati dalam adunan.
4. Tepung diayak bersama serbuk penaik dan masukkan sedikit sedikit ke dalam adunan diatas.Diikuti dengan kelapa dan gaul sebati.
5. Griskan tin pembakar empat segi atau bulat berukuran 9 inci dan lapik kertas serap minyak.
6. Tuangkan adunan kek kedalamnya.
7. Untuk membuat toppingnya, pukul mentega dan gula hingga sebati lalu dimasukkan kelapa dan gaul lagi.Taburkan topping diatas adunan mentah tadi.
8. Bakar dalam ketuhar yang telah dipanaskan ke suhu 180 darjah celcius selama 45 minit.

STRAWBERRY CHEESECAKE & CHOCOLATE RICE ORANGE MUFFIN

 
 
 




STRAWBERRY CHEESE CAKE - resipi dr Kak Rinn fp

Bahan-bahan:

Dasar kek:

180gm biskut marie
100gm mentega, dicairkan

* Kisar kering biskut marie. Campurkan dengan mentega cair dan tekan padat dalam loyang. Sejukkan dalam petiais selama 20minit or so.

Isian kek:

250gm cream cheese
40g gula halus

30gm tepung gandum
3 biji kuning telur
150gm yogurt asli

3 biji putih telur
60gm gula halus

200gm inti strawberry (Strawberry filling)..kita gantikan dgn fresh strawberry

Cara-cara:
1. Putar cream cheese hingga ringan. Masukkan gula halus dan putar lagi hingga sebati.
2. Masukkan tepung gandum dan putar lagi hingga sebati.
3. Masukkan 3 biji kuning telur dan terus putar hingga sebati.
4. Tambah yogurt asli dan putar hingga licin.
5. Di dalam bekas yg lain, pukul putih telur hingga berbuih dan kembang. Masukkan gula
dan putar lagi hingga kental. Masukkan ia ke dalam adunan keju di atas.
6. Sapukan inti strawberry (atau jem strawberry) ke atas dasar kek biskut marie tadi.
Kemudian tuangkan adunan cream cheese.
7. Bakar pada suhu 160 drj di dalam dulang berisi air (kaedah bain-marie) selama 60 minit atau sehingga kekuningan.
8.Keluarkan kek dari oven dan biarkan sejuk. Simpan dalam petisejuk selama 5 jam atau semalaman. Hias ikut citarasa.

Ingredients:
Base :
180gm marie biscuit
100gm butter, melted

* Blend marie biscuit. Mix with melted butter and press the base onto the spring form pan. Refrigerate for 20 minutes or so.

Filling:

250gm cream cheese
40g castor sugar

30gm flour
3 nos eggs yolks
150gm natural yogurt

3 nos white eggs
60gm castor sugar

200gm strawberry filling - I used fresh strawberry - sliced


Method:

1. Beat cream cheese until fluffy. Add in sugar and beat until well blended.
2. Add in flour and mix again.
3. Add in eggs yolks and beat until well mixed.
4. Put in yogurt and beat until smooth.
5. In other clean bowl, whisk egg whites stiff peak formed.Add the sugar and mix again until mixture stands in stiff peak. Fold in the above cheese filling.
6. Spread strawberry filling on the base and pour the filling. - I arranged sliced strawberry on top of the base and pour the filling .
7.Water bath bake in a preheated oven at 160 C for 60 minutes.
8. Leave it to cool and keep in the fridge for at least 5 hours or overnight before cutting.








CHOCOLATE RICE ORANGE MUFFIN - resipi dari Mamafami fp

Bahan A:

2 cawan tepung gandum ]
1 s/k baking powder ] ayakkan 2 kali
1/2 s/k soda bikarbona ]
1 cawan gula perang
2 s/b coklat rice
hiasan ~ coklat chip [jika suka

Bahan B:

1/2 cawan butter cair
1 cawan jus oren
1 biji telur [pukul sedikit]
1 s/k oren paste

Cara:

1. Panaskan ketuhar pada suhu 180 api [atas dan bawah] selama 15 minit.
2. Masukkan semua bahan A dalam mangkuk dan gaulkan rata.
3. Curahkan bahan B dan kacau rata.
4. Masukkan kertas muffin dalam acuan muffin.
5. Sudukan adunan dalam kertas muffin hampir penuh. Boleh hiaskan dgn coklat chips jika suka.
6. Bakarkan selama 20 minit.
7. Sejukkan dan boleh dihidangkan.

Ingredients A :

* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon bicarbonate soda
1 cup brown sugar
2 tablespoons chocolate rice
chocolate chips ~ for decoration (optional)
Items marked * are to be sifted twice

Ingredients B :

1/2 cup melted butter
1 cup orange juice
1 egg ~ lightly beaten
1 teaspoon orange paste

Method :

1. Preheat oven at 180C for 15 minutes.
2. Place ingredients A in a big bowl and mix well.
3. Make a well in the middle and pour in ingredients B. Using a whisk, mix the ingredients together.
4. Spoon the mixture into the muffin cups, 80% full.
5. Sprinkle some chocolate chips on top if desire.
6. Bake for 20 minutes.
7. Cool and serve.

NASIB YG MALANG

Hari nie kita nak share gambar rumah kita. Rumah kita beli lebih kurang 5 tahun yg lalu dan tak pernah siap-siap. Tak tahu lah bila rumah ku akan siap. Hati sedih mengenang nasibku dan nasib org-org yg senasib dgn ku. Dahlah duduk jauh dan tak berpeluang nak menjenguk langsung projek rumah yg terbengkalai.







Memang ku dah berangan-angan nak duduk di rumah sendiri bila kita balik Malaysia tp nampaknya kene tangguh semua perancangan .
Kita cuma dapat berharap dan berdoa agar semuanya akan berjalan lancar lagi..INSYAALLAH.......


P/S: GAMBAR-GAMBAR NIE HANYA TUNJUKKAN TAPAK PROJEK YG TAK SIAP DAN KITA TAK TAHU MANA SATU RUMAH KU....ribuan terima kasih kpd org yg mengambil gambar-gambar nie dan menghantarnya kpd kita....

A DAYTRIP TO TALLINN, ESTONIA

Yesterday (Saturday) I spent the day in Tallinn, the capital of Estonia. We departed to Tallinn by ferry ( SuperStar) at 7.30am , arrived at 9.30am and back at 6.30pm, it took roughly 2 hours for one trip.

I made the cake before Maklang gave me the recipe at Noriani's recipe blogspot. I just follow the hints from Maklang's fp and Kak Rinn's fp. Maybe next will try the exact recipe.













PANDAN COCONUT BUTTER CAKE

Ingredients:

185gm butter
185gm cake flour
150gm castor sugar
3 eggs
1 1/2 tsp baking powder
pinch of salt
50ml thick coconut milk
1/2 tbsp pandan paste
40gm descicated coconut


Topping:

descicated coconut
butter


Method:

Mix descicated coconut with butter into crumbs.



Method:

1. Preheat oven to 180c. Grease and line on 20cm baking tin.
2. In a small, combine the coconut milk and the pandan paste. Stir well,set aside.
3. Cream butter and sugar until light and fluffy.
4. Add in eggs one at a time.
5. Fold in flour,baking powder,salt and mix well.
6. Pour in the coconut milk/pandan paste mixture, descicated coconut and mix until well blended.
7. Spoon batter into prepared baking tin and spread top evenly and sprinkle the topping.
8. Bake for 40 - 45 minutes.
